Vegan Maca Pancakes

Who says no to pancakes?

Who says no to pancakes?

Maca powder is so fine that it’s easily combined with the flour used for making pancakes and gives them a lovely little boost! This stack from themacateam.com is perfect for a healthy and nutritious brunch.

You’ll need:

1 banana, peeled
½ cup almond milk
¾ cup spelt or buckwheat flour
1 tbsp baking powder
½ tbsp baking soda
¼ tbsp vanilla extract
1 ½ tbsp maca powder

Method:

Combine the banana, vanilla and milk and blend on the highest speed to a smooth liquid
In a mixing bowl, whisk together the flour, baking powder, baking soda and maca powder
Pour the milk into the dry ingredients and whisk until combined
Form pancakes on a buttered griddle or frying pan over a low heat – they won’t bubble but will be easily flipped after about one minute
Turn the pancakes over and leave for another 30 seconds or so until cooked through
Serve with fruit and maple syrup
