Christine Bailey’s Acai Blueberry Ice Cream

Healthy ice cream? Yes, it exists and it’s a complete cinch to make!

Rich and creamy, this quick ice cream is packed with superfoods to give you a vitality boost. Acai powder and blueberries are packed with skin glowing antioxidants. Adding some yogurt also provides probiotics to support digestive health. You can keep this dairy-free by using coconut yoghurt.

Serves 4

1 x 400g can full fat coconut milk

200g coconut yogurt or regular full fat Greek yogurt

1tsp acai superfood powder

¼ cup honey, maple syrup, coconut syrup

225g fresh or frozen blueberries

1 Place coconut milk, yogurt, acai powder, syrup and blueberries in a high speed blender and process until very smooth and creamy.

2 Pour the mixture into an ice cream maker and churn according to instructions. Alternatively, you can pour the mixture into a shallow proof container and freeze until firm – just be sure to stir occasionally during freezing!
