Video: Gizzi Erskine’s Bircher Muesli

A healthy and super simple breakfast to see you through the week

For five to eight servings you’ll need:

100g oats
2 tbsp mixed dried tropical fruit, roughly chopped
2 tbsp chia seeds
1 tbsp flax seeds
Handful of brazil nuts, roughly chopped
350ml Arla milk
250ml good quality apple juice
1 apple, grated1
tbsp maple syrup
Dash of all-natural vanilla extract

To serve (two portions):

4-6 tbsp Bircher muesli
2-3 tbsp thick Arla Skyr Yoghurt
Splash of Arla milk
6 tbsp mixed summer berries

Method:

Mix all of the ingredients for the Bircher muesli together in a bowl and mix well. It will be too wet at this stage but the soaking process drinks up all that liquid and flavor.
Cover the bowl with cling film or pop in a sealable container and place in the fridge overnight. Leave for at least 12 hours.
When you’re ready to eat, split the muesli between two breakfast bowls, top with yoghurt, a slurp of milk, fruit and serve straight away.

The refrigerated bircher muesli will keep for up to five days. The longer the muesli ferments, the better it is for your gut health.
